The restaurant, The Admiral St David, where the menu is eclectic and draws on inspiration from Asia and Australasia mixed with local Welsh produce. The bar also specialises in twisted cocktail classics using Welsh gin and vodka. The hotel’s award-winning spa is regarded among the top in the UK and offers relaxation pools, a sauna, a gym, treatment rooms and a relaxation suite.
Hammet House – Pembrokeshire
This 15-room boutique hotel is located in rural Pembrokeshire and offers a charming hotel experience in an 18th-Century ivy-covered country house. The chic, airy rooms are furnished in a contemporary style and are adorned with flat-screen TVs, free Wi-Fi and en-suite bathrooms. The restaurant has been awarded two rosettes by the AA. It offers a tasting menu as well as serving food all day in the library bar, dining room, drawing room and outside. If relaxed, contemporary chic is what you’re looking for you’ll probably not find anywhere better in Pembrokeshire.
Ffynnon – Dolgellau
This tiny boutique hotel is a converted Gothic Victorian rectory and is situated in the village of Dolgellau at the foot of Cade Idris in the Snowdonia National Park with only six rooms. Each room is a bespoke design with features and style inspired by nature, far-flung parts of the world and classic Welsh style. The hotel is guest-focused and offers in-room beauty treatments and a hot-tub, which can be booked for personal sessions with massage oils and aromatherapy. Though the hotel doesn’t have a restaurant it offers in-room meals, afternoon tea and an honesty bar for when you fancy something stronger.
Plas Dinas – Caernarfon
Situated within 15 acres of grounds, this country house hotel date back to the 17th Century and is four miles from Caernarfon Castle. With former residents including Princess Margaret, the hotel has kept its Welsh country residence’s features including family portraits and original furniture during its conversion to luxury accommodation. It’s ten rooms are designed to have an individual style that reflects the historic character of the property. The restaurant is housed in the gun room, which maintains its original arched fireplace. The food offers traditional country fayre with a touch of London dining glamour, including a cocktail menu.
